How to Make a Cucumber Sandwich

Cucumber Sandwich is a light and refreshing appetizer or lunch dish. These sandwiches are easy to make and don’t require a lot of ingredients or time. They can be whipped up for a tea party, Mother’s Day brunch, baby shower, bridal shower, or any get together. It is also a great appetizer to serve during summer. It is cool and refreshing and goes well with a variety of beverages like tea, lemonade, or fruity punch.

The cucumber sandwiches can be made ahead of time and kept in the refrigerator for a few hours. The bread can be toasted a few minutes before serving for a more crunchy texture and crispier edges. Adding herbs like flat-leaf parsley, chives, and dill adds extra flavor to the sandwiches. To keep the sandwiches from getting too soggy, sprinkle the cucumber slices with salt before assembling them. This pulls out some of the water so that the bread won’t be saturated. The cucumbers can be seasoned with lemon pepper to add more flavor as well.

This recipe can be made with any type of bread. For best results, use a soft white sandwich bread, such as Pepperidge Farm Very Thin White, that is thin and finely sliced. Avoid thick, crusty breads that can overwhelm the delicate flavors of the cucumbers and cream cheese.

The type of cucumbers used in these sandwiches are called English cucumbers or burpless cucumbers. They are long and thin and have smaller seeds and edible skins than the standard American cucumber that comes shrink-wrapped in grocery stores. You can find these cucumbers in the produce section of most grocery stores. They are usually labeled with an “E” or a “B”.

To make the sandwiches, place the cucumbers in a colander and sift through them to remove any excess moisture. Place them on a sheet of paper towels and pat dry. Mix the cream cheese with the mayonnaise until smooth, and spread on half of the bread slices. Then layer the cucumbers on top of the bread slices. Cover the cucumbers with the other bread slices, cream cheese side down. Slice the sandwiches into triangles and serve.

These cucumber sandwiches are the perfect appetizer for a tea party, Mother’s day brunch, baby shower, bridal shower, or other gathering. They can be served with a pitcher of tea, lemonade, or punch to match the theme of the party. They are also a great light lunch that is easy to put together and will not take up too much space on your table. Enjoy! Gurkensandwich
